🍲 Quinoa-Daal Khichdi A wholesome, protein-pack 🍲 Quinoa-Daal Khichdi
A wholesome, protein-packed comfort meal

Ingredients

* 1 cup quinoa
* ½ cup moong dal or masoor dal
* 1 tbsp oil or ghee
* 1 tsp cumin seeds
* 2 garlic cloves, minced
* 3 green chilies, chopped
* 1 onion, chopped
* 1 tomato, chopped
* Peas
* Carrot, chopped
* Optional: boneless chicken bites
* 1 bay leaf
* ½ tsp turmeric powder
* ½ tsp red chili powder
* 1 tsp coriander powder
* ½ tsp garam masala
* Salt to taste
* 1 tsp grated ginger
* 4–5 cups water (adjust for desired consistency)

Method

1. Wash and soak quinoa and dal for 30 minutes.
2. Heat oil or ghee in a pot. Add cumin seeds, garlic, and green chilies. Sauté for a few seconds.
3. Add onion, tomato, peas, carrot, and any other vegetables you have on hand. Sauté until softened.
4. If using chicken, add it before veges and cook for a few minutes.
5. Add bay leaf, turmeric, red chili powder, coriander powder, garam masala, and salt. Mix well.
6. Stir in the soaked quinoa, dal, and grated ginger.
7. Pour in water and mix everything together.
8. Cover and cook until the quinoa and dal are soft and the khichdi reaches your preferred consistency. Add more water if needed.
9. Serve hot with yogurt, pickle, or a squeeze of lemon.
Tip: This is one of those “use what you have” recipes—feel free to add spinach, peas, zucchini, or any leftover veggies for an extra nutrition boost.
